The ICA Kitchen Assistant has foundational practical kitchen knowledge and skills at their disposal. They support the kitchen processes, as well as preparation and presentation, under professional instruction.

  • THE PROGRAM:

    A compact, intensive workshop provides the most important foundational basics in the kitchen over five days.

  • WHO IS THE PROGRAM AIMED AT?

    Those without existing gastronomical experience, from other industries and lateral entrants (entry is also possible with little German knowledge).

  • WHAT CONTENT DOES THE PROGRAM COVER?

    Foundations of procurement, production, food distribution and removal.
    Working hygienically and cleanliness at the place of work.
    Merchandising and product maintenance – handling and processing food products.
    Correct use of kitchen techniques and instruments.
    Command of everyday preparation and presentation.
    Cooking with a recipe or specifications.
    Working with supply and distribution of food.
    Practical kitchen experience to further the above-mentioned content

  • COURSE STRUTURE

    ▸ Five day compact, intensive workshop, which alternates between theoretical and practical phases.
    The workshop takes place in the ICA Training Centre (ICA Bildungszentrum).

  • COURSE COMPLETION WITH ICA CERTIFICATE:

    Upon successful completion of the course, participants will receive a certification as an ICA Kitchen Assistant.

    Motivated and talented Alumni can build on this by developing themselves further as ICA Junior Chefs.
