The Junior Chef organises their working area independently.
While doing this, they pay attention to optimised processes and ensure quality and hygiene standards during preparation and presentation.
They complete kitchen work and production processes competently and independently.
A continuous educational program, taking place over five months, which is completed alongside work.
During the program, there are three phases of attendance.
In the practical phases (periods between the attendance phases), new knowledge will be applied in the workplace, as well as built upon with tasks, which have been specially developed for the subsequent attendance phase.
Topic-specific lessons, which have been prepared as distance-learning courses, additionally provide established knowledge.
WHO IS THE PROGRAM AIMED AT?
Kitchen assistants, those with an affinity for cooking, ICA kitchen assistant. (Good spoken and written German knowledge is an advantage).
WHAT CONTENT DOES THE PROGRAM COVER?
Deeper knowledge with theoretical and practical learning methods.
Comprehensive merchandising and product maintenance.
Hygiene management and Quality Assurance.
Planning and carrying out kitchen processes productively and in a quality-oriented manner.
Meaningful application of cooking techniques and cooking programs.
Providing and applying individual and creative ideas.
Cost-conscious action and calculation.
Further professional kitchen competencies.
▸ Start with kick-off and first attendance phase (four days)
▸ Practical phase at working location: Applying what has been learned, activity-orientated work, work-book with tasks (approx. 2 months)
▸ Second attendance phase (three days)
▸ Practical phase at working location: Applying what has been learned, activity-orientated work, work-book with tasks, distance course: Production techniques (approx. 2 months)
▸ Third attendance phase (three days) with final exam and certificate presentation.
The attendance phases will take part in ICA Training Centres (ICA Bildungszentren).
COMPLETION WITH ICA- CERTIFICATE:
Upon successful completion, the participants will be awarded the Certificate of Professional Qualification as an ICA Junior Chef.
It is possible to develop further on this course with the Junior Chef Qualification (IHK), which builds upon this course.
